gonna be honest here, first reason for my grailed units are from their gameplay style, but from there comes my attachment to their characters and lores 🙂
lv 108 Arash, lv 108 Gong, lv 100 Leonidas, lv 100 George, and many others not max grailed…

ofc I didn’t forget the coomer lv90 grail and 2k fou on Nero, CasNero, and Astolfo ( ͡° ͜ʖ ͡°)

lv 100 ishtar, lv 100 eresh – rin enjoyer represent, these were a no brainer
lv 118 space ishtar – for the same reason as above + SW2 was one of my favourite event stories
lv 100 junao – dude carried me so much when my account was still underdeveloped so he deserved it
lv 90 parvati – such a good quick looper and she was my main farmer before castoria so she deserved it
(soon to be) lv 100 muramasa – we’re finally getting shirou as a pseudo-servant, of course he’s getting grailed. also has one of the sickest NP animations imo.
(soon to be) lv 100 summer melt – alter ego melt was my SSR and penguin melt is just super cute so i have a soft spot for her. just waiting on 1-2 more NP levels.

lv 100 artoria – OG saber, the first servant i got to learn about during my playthrough of FSN, of course she’s getting grailed
lv 100 morgan – love her design and animations, don’t know anything about her story since i’m waiting to read LB6 for myself on NA but i’m sure it’ll make me like her even more
lv 100 arcueid – read tsukihime and loved her personality. still remember myself screaming when she was revealed as the 7th anni servant.
lv 100 summer skadi – look at her FA, need i say more?

i dont have that much, cos im quite lazy in terms of farming stuff, but i have someones grailed tho

my first one was Beowulf (lvl 100, i love this guy so much i even chose him as free sr ticked back in the days
the second one was Maid (also lvl 100), as my first limited ssr servant, i was so lucky even getting her when i started playing this game on summer1 rerun
at one point i spammed those random grails bc i didnt even know that i was doing, but i have one at lvl90 – Wilhelm Tell, he’s just that cool and i like him

im planning eventually do justice for tamamo, bc she was my first ssr servant, and get her to lvl 100, and also davinki bc shes my first np5 ssr servant

I kinda accidentally got Arjuna Alter to NP5 rolling for him and Karna during the LB4 release. I was committed to getting Karna, but he never came home. The fact that I got NP5 alone made me commit to maxing out Altjuna all the way, so up to lvl 120 he went.

Level 120 Morgan – enjoyed her lore in FGO and how she is portrayed in some other Arthurian books and stories have read IRL.
Level 100 Dantes – Same as Morgan from having read the book/stories based on the character in “The Count of Monte Cristo.” The embodiment of never giving up, waiting and hoping for the time of vengeance on those that wronged him.
Level 100 BB and Kama, eventually 120 – Love and adore their personality, as with all the sakura faces that have their own unique personalities and traits. Also BB to make Isa proud lmao.
Saying all would take another post to explain lol
Edit: All-in-all though a lot of it can be summed into enjoying and liking their personalities and/or lore from material having read before

My grail stories:
Minamoto no raikou (both zerk lvl100 and lancer lvl90) – i love her, shes my first 5 star in playing fgo in 2 weeks, her motherly nature is genuinely very sweet and caring for me cuz i have mom issues. I also love purple. Its my favorite color.
Rama lvl100- his undying loyalty to his wife is really sweet and his dress and pants outfit combo is so cool . His story lore is great, one of my faves. Sita is not here anyways-
David lvl104 for now- ah my damn beloved, love his va, love his lore (my childhood favorite), a dilf, i absolutely love his son as well. Im his new abishag.
Fuuma lvl90 – his role in shimousa is great, saved my ass from damn wyverns in part 1, star gen go brr.
Bartholomew lvl70 (lvl90 in the future) – great voice, decent design, hes just hot.
Arjuna archer lvl100 – i love arjuna, the reason why i played fgo, saw an ad about his archer form and im in love.
Dantes lvl100- i love the musical, the movie and the book of the count of the monte cristo. the moment i saw that hes a servant in fgo, i immediately gave my sq to him and fortunately got np2. Great husbando.
Mandricardo lvl80 (soon lvl90) – i love him, best boy, my best friend. If you know, you know.
Qin shi huang (future lvl100) – their design is amazing, lelouch my emperor, love them in lb3.
Lanling lvl90 – his role in lb3 is great, i love his design, his np, and hes very cute.

I’m talk about my grailed servants in NA:
– Lv 108 Shiki Saber: Because of her appearance, she is so beautiful and she is my first SSR in NA.
– Lv100 Kama: Because of her gameplay is too OP (that’s all)
– Lv90 Arash: STELAAAAAAA!
– Lv90 Ashwattama: He’s very cool especially at ascen 1, he looks like Kamen Rider
– Lv90 Sieg: He’s too cool in Apocrypha
– Lv90 Angra Mainyu
– Lv80 Insshun: the lowcost of Super Orion (his crit is so amazing)
– Lv80 Kojiro: Because he is REGEND
– Lv90 Fujino & Saito Hajime: I will grail them over lv100 if I didn’t run out of grail.

Mata Hari lvl 100: My first grailed and bond 10 servant. I started grailing her as a joke due to my terrible luck back when I first started playing. After reading her profile regarding her wish and using her from Orleans all the way to the Solomon raids, she became one of my favorite servants in FGO.

Penthesilea lvl 100: A straightforward and brutal NP animation for a female berserker and a cute design. She’s probably the one I’d consider my number 1 waifu in FGO.

Columbus lvl 100: I have a soft spot for villains you love to hate. He’s unredeemable scumbag with a crazy beard no never gives up. It also helps that he’s drawn by Moto Murabito.

Bunyan lvl 100: I just want to protect that smile after reading the All the Statesmen event…

Sei Shonagon lvl 100: Her memetic NP and class aside, she’s got a fun personality.

-Caesar lvl 90: My second grailed servant, enjoying a well deserved retirement after nuking Lancer Artoria.
-Gareth lvl 90: I love her second ascension design.
-Chen Gong lvl 75: The perfect servant for getting rid of unwanted story supports *cough*Shimousa*cough*
-Leonidas lvl 70: Cool muscular spartan

Here is my grailed servants stories (level 100)

Artoria (aka OG Saber) – My 1st best girl since fate/stay night anime (the studio deen version), even in the present day. I’m the truly simp OG saber enjoyer…. She is cute too…

Jeanne D’arc (The ruler class) – I 1st discover Jeanne D’arc since her cameo in Fate/Zero Not familiar about her on that time, until play FGO jp in 2016 (i lost that account and never recovered) and fully watch fate/apocrypha anime. And this is also another best girl for me. Like artoria saber

Scathach (Lancer) – I discover about her during theb 1st few years of FGO NA and i’m a fully simp matured woman like scathach. I don’t have her during 2018-2020 due to busy work and other stuff… But i was able to get her during new year 2021. And played fate/extella link using scathach during those times. I don’t like calling her ********. I will call her Sca~chan because i’m a zeta chad Sca~chan Enjoyer! Oh, and after reading her interlude, its like she was alone in the land of shadows…. That is why

Scathach-Skadi (Caster) – Another best girl. I was able to get her during 3rd anniversry on NA. Her story during LB2 was depressing for me, but i’m really glad and happy that i got her. I even read her interude in JP (spoilers for me in my end, lol)…. Its like, its even more depressing than her LB 2……

Bedivere (Saber) – Just like artoria, he is my favorite and decide to grail him to 100 because he is voiced by mamoru miyano (Bedivere was also voiced by mamiko noto from fsn deen). He is truly loyal to his king. Even in camelot singularity, he is still loyal to artoria.

Hajime Saito (Saber) – Another reason why i grailed him, because its not about “vergil” or “motivation” memes. Hajime Saito is a awesome name and he is also my favorite character during samurai x days. He also shared the same voice actor as naofumi from shield hero and sakuta from aobuta.

Space Ishtar – 110, strictly utility-based grailing as she is my only NP2 SSR I will ever have as F2P, thought of going to 120, but ended up choosing the battery append for even greater utility.

Super Orion – 100, bought into the hype, regret it. He was not worth it, and if someday Lesengle will introduce an opportunity to refund grails, he would be the first (and only one) in line even if I had to burn him for that. Though, more than that, I want my 4 lores back.

Amakusa – 100, was my favourite character from Apocrypha, and needs a bit more damage at NP1. Also, he likes grails, so he shall have them.

Kippoushi – 100, my first all real DPS SSR (Anastasia doesn’t count, as she is a caster, and casters that aren’t Gong don’t do damage), and I liked him, and he needed a bit of help to do damage on release, so I gave him 5 grails and a Merlin (That’s the main reason i decided to roll for Merlin back then).

Saber Lily – 90, felt like she needed some help in the damage departament when she was included in FP gacha and got her animation update, and 2 grails isn’t that much, so I gave them to her.

Jason – 90, liked him even before Atlantis (though, back then I did it of spite for all Medea stans dunking on him), but after LB5.1 I fell in love. Also, he does need a little bit of damage to make him better at farming, so there you have it.

Angra Mainyu – 90. In my eyes, Hollow Ataraxia was at its best when it ditched all of the daytime fanservice for nighttime story, and I felt obligated to make him great in FGO. So he was my first bond 10 servant (he needs bond 10 for his rank-up).

Salieri – 90. Fell in love with his visual design (second ascension, specifically), and also knew that he needs a bit of help in the damage departament for farming.

Gorgon – 90. When I finally assembled the avengers, I realized that only 1 of them isn’t grailed. So I fixed that. No regrets here.

My grailed servants have for the most part been ones that I either loved their design, their backstory or both.
The ones that come to mind are Jeanne, Baobhan Sith, Melusine and Mandricardo .
I actually started FGO when random youtube videos popped up showing Jeanne as a playable character, when I finally got her I enjoyed learning more about her from her interludes and how regardless of how badly the people treated her in life and branded her a witch she never once regretted her decisions and remained resolute.
Baobhan Sith and Melusine are in the same boat, I have a thing for tragic characters. Both devoted their lives to the one they loved and while the way it ended was depressing they had a chance to start again once they were summoned to chaldea.
As for Mandricardo: I already liked his gameplay and design, but reading through Atlantis made him best boy in my eyes and I can relate to him in someways. While he doesn’t fight for glory or fame he fights for his friends and i think that has more weight, he is currently a lv 120 project in JP.

I have lvl 100 Summer Medb, Salome, Bradamante, S.Ishtar, Scathach and Chen Gong. Chen Gong is probably the only one I grailed solely for damage the rest is for my Waifu.

So for the current lvl 100 grailed servants:

Jing Ke – always thought she was cool and had a fun kit. I really enjoyed her role in LB3 as she’s the sole reason we had a fighting chance against the Emperor

Bloodaxe – my go to aoe Zerk for a long time as other options were a little too weak or too frail to use. The dynamic between him and his wife seems really fun and I wished that was explored more (also buffs for Bloodaxe pls)

Bart – has become one of my options farming caster waves and doors due to cheap cost and good damage even against non bronze enemies. Very silly man that means well… most of the time, tho he is a man of good taste

Helena – Waver May be one of first 5 stars, but Helena helps feel my need of a caster who can support and do damage. Pretty fun character and cute. Glad she has gotten a nice buff and hope she gets more eventually.

Melt – I am of many Waifus, but Melt is on the top for sure. Gorgeous design, really good kit, fun to use, CCC event was an amazing character arc for her. I just love her man. Probably one of my candidates for who’s going to be my first lvl 120 servant.

Currently On the fence with grails but:

Scáthach was my second Five Star, right after Okita, but I was in love with Celtic Mythology, so she’s sitting at NP3 Level 100. Slowly getting the last append skill and 120.

Level 94 Medea, currently. Favorite character from Greek Mythology, being one of the few Women who isn’t just known for birthing a hero or dying horribly. She’s the reason I found out about Fate, since my friend recognized her name in my insane ramblings. Plus I’ve seen people Grail Jason, and that sleight requires balance.

Possible Grail projects:
Artemis/Orion: Similar to Medea. Artemis is my favorite Greek God and I was named after Orion, being my middle name. I’d do it out of spite to people telling me I should’ve picked up Waver or that I could just use Euryale/Summon for Grand Orion.
Enkidu: While I already have Scáthach, I fell in love with Enkidu, his simple design, personality and straight up being a weapon.

If they ever drop a Sun Wukong, that’s an immediate save for 2+ years and Grail. I read Journey to the West in Chinese and fell in love with the stupid monkey.

Jalter summer: she was one of my first wellfare servants and she helped me a lot with her berserker class, I also really adore Jalter herself, her history, development over the years and moments in events
Elizabeth: she was my first sr in the whole game and she has been helping me for many years, also she is very funny in halloween events
Tomoe gozen: Similar to Eli was my second sr, a samurai woman who is part Oni is such a bizarre concept but at the same time interesting that I end up loving it, I love her ascensions and her VA (every time I hear her NP I can’t help it laugh) also her story makes me very moving (it still hurts not having gotten his summer version)
Hercules: I love his story with Illya in FSN, he has been helping me since I started in this game as he was one of my first servants, thanks to him I have defeated many complicated bosses from the beginning, so I appreciate him
BB: Every time she appears in an event is so funny and interesting, her NP animation is one of my favorites because of how random it is, and that she has a class dedicated to her seems like a very good idea and I love her personality ( I like bad girls)
Gorgon: I love mean girls, I love giant girls, I love medusa, I love her interludes, I love her fan art, I have nothing more to say
Passionlip: Her whole existence makes me a little sad, I don’t know why, that she is the most forgotten by the fans, her dialogues, that she is the only sr among her sisters, etc. So I decided to give her all the love I could
Jason: her participation in Atlantis was sublime and she is another Hercules fanboy, I don’t need more
Mandricardo: The one who undoubtedly deserves the position of best friend of the protagonist, that he himself is aware that he is not a very important character and that is why I have quite little self-esteem seems to me the best thing they could do, and his sacrifice in Atlantis It is spectacular

Grailed Ozy to 100 because he’s a fucking chad and also DIO.
Will grail Summer Nobu to 120 because I can and it’s Nobu.
Will grail Maou to 100 because Nobu. Might also grail Hot Wheels to 100 because of how awesome he is. He’s already 90 so probably will finish the job.
Some other candidates to 100 is Summer BB, Melt and Summer Kiara. I haven’t been playing for too long (450 days approx.) so just don’t have the resources to complete my wishes yet

I got Nagiko-chan in a few rolls even thought I wasn’t super interested in her but I ended really liking her, yet I didn’t really had the intention to grail her at first, but what really changed my mind was her ridiculously cute and really well drawn 4th ascension art (and the thighs helped too). It’s one of my favorite art pieces in the game, maybe my 1# favorite
